Isle of Wight Soft is made by hand on the Isle of Wight using rich, pasteurised cow’s milk. It’s a classic soft, white-rinded cheese — think of a British answer to Brie, but with more character and none of the pretentiousness. The kind of cheese you serve to impress guests but end up scoffing yourself before they arrive.
When young, it’s firm and buttery. Give it a bit of time (and warmth), and it turns into a molten, oozy puddle of dairy joy that could happily replace half your dinner. Creamy, mushroomy, with a mild tang that creeps in just when you think it's all cuddles and comfort. Put simply: it’s soft cheese done properly.
