Ismay Stoker Dorset Brie is the softer, slower, and more elegant side of British cheese. Handmade in Dorset using rich local milk, this is a classic bloomy-rind Brie-style cheese with a proper West Country twist.
When young, it’s firm, fresh, and milky. But give it a few days to ripen and it turns into something magic — soft, oozy, and full of buttery, mushroomy goodness. The white rind is edible (and delicious), and the inside melts into a golden cream that practically demands a crusty baguette or a spoon if you're feeling lawless.
